Limoncello

Kaz Kazenske recently brought his famous limoncello to a Power Flow dinner party. It’s delicious, refreshing and makes a great gift. This recipie makes about 7-1/2 1-liter bottles.

INGREDIENTS: 

  • 30 organic lemons

  • 5 bottles (750 ml) 100 proof vodka

  • 8 cups sugar

  • 10 cups water

PROCEDURE:

Step One:

  1. Scrub the lemons in warm water to remove any residue and pat dry.

  2. Peel the lemons with a vegetable peeler. Be careful not to remove the white pith, which will impart a bitter flavor to the limoncello.

Step Two:

  1. In a one-gallon jar, add 2 bottles of vodka

  2. Add lemon peels

  3. Cover jar and let sit at room temp for 80 - 90 days in a cool dark place.  Stir every 5 -7 days

Step Three (after 80 - 90 days):

  1. In large sauce pan, make a simple syrup by combining the sugar and water. Bring to a boil, stirring to dissolve the sugar, until thickened, 7-10 minutes. Remove from heat and let cool to room temperature.

  2. Add syrup to Step One limoncello mixture

  3. Add 3 bottles of vodka

  4. Cover jar and let sit at room temp for 80 -90 days in a cool dark place.  Stir every 5 -7 days

Step Four:

  1. At end of second 80 - 90 days, strain the liquid using a fine mesh strainer or coffee filter and discard the lemon peels.

  2. Bottle limoncello

Store the bottles in a cool, dark place, or in the freezer. Limoncello will keep for several years.
