Glazed Grilled Salmon

INGREDIENTS

  • ¼ cup + 2 Tablespoons dark brown sugar

  • 2 Tablespoons + 2 teaspoons Chinese hot mustard (do not substitute regular mustard)

  • 2 Tablespoons soy sauce

  • 2 teaspoons rice vinegar

  • 4 7-8 oz. salmon steaks or fillets

PREPARATION

  1. Combine sugar, mustard and soy in a medium bowl.  Transfer 2 Tablespoons of mixture into a small bowl, mix in vinegar, then set aside.

  2. Brush one side of salmon generously with half of glaze.

  3. Place salmon, glazed side down, onto grill.  Grill until slightly charred, about 2-4 minutes.  Brush top side with remaining glaze.  Turn over and grill until done to your liking, about 2-5 more minutes.

  4. Before serving, drizzle reserved glaze over salmon.  Serves 4.
